Carrout soup

You might wonder why there are two soup recipes so soon after each other. That’s because people asked for the recipe in English as well, so I decided to translate it into English and show that it can be made with any vegetable you want!

What do you need?

  • 1 kg carrots
  • 1 zucchini
  • 2 onions
  • 2 small potatoes
  • 2 L water
  • 4 cubes of broth
  • garlic, nutmeg and pepper to season

 

What do to?

It’s very simple. You put the carrots, the zucchini, the onions, and the potatoes in a pan with 2 liter of water to boil until the vegetables are soft. You add the cubes of broth and then just mix it all together with a (hand)blender. Add garlic, nutmeg and pepper to taste.

Potatoes are used to bind the mixture, you can use less potatoes, but the soup will bind not as well and will be thinner! However, you will have less carbs in your soup.
